Ingredients

  • 1 (8 1/4 oz.) can diced, julienne or sliced pickled beets
  • 1/2 cup minced red onion
  • 1/2 cup unflavored nonfat yogurt
  • salt
  • pepper

Instructions

  1. Drain the beets, reserving 1/4 cup of the liquid.
  2. In a food processor or blender, whirl the beets and reserved liquid until very smoothly pureed.
  3. In a small bowl, mix the beet puree with minced red onion and unflavored nonfat yogurt.
  4. Add salt and pepper to taste.
  5. If making ahead, cover and chill for up to 4 hours.
