Instructions
- Drain the beets, reserving 1/4 cup of the liquid.
- In a food processor or blender, whirl the beets and reserved liquid until very smoothly pureed.
- In a small bowl, mix the beet puree with minced red onion and unflavored nonfat yogurt.
- Add salt and pepper to taste.
- If making ahead, cover and chill for up to 4 hours.
