Salmon Dijonnaise

Ingredients

  • 1 lb salmon fillet
  • flour
  • 3 tablespoons butter
  • 1/3 cup dry vermouth or 1/3 cup white wine
  • 1 tablespoon Dijon mustard
  • 2 teaspoons capers
  • 1/2 teaspoon garlic salt
  • 1/4 cup heavy cream

Instructions

  1. Dust salmon lightly with flour.
  2. In large skillet, melt butter over medium high heat.
  3. Add salmon (skin side up for fillets).
  4. Cook 3 minutes.
  5. Mix together wine, mustard, capers and garlic salt.
  6. Turn salmon; cook 2 minutes.
  7. Add wine mixture.
  8. Cook 2 minutes until fish flakes easily with a fork.
  9. Remove salmon, add heavy cream into skillet.
  10. Boil briefly to thicken.
  11. Serve over salmon.
