Salmon Quesadillas

Ingredients

  • 1/2 t. garlic powder
  • 1 can (14 3/4 oz.) salmon
  • 1/2 t. pepper
  • 1 t. vegetable oil
  • 1-2 t. dried basil
  • 1 T. butter, softened
  • 2 c. mozzarella cheese
  • 4 flour tortillas

Instructions

  1. Mix first 5 ingredients.
  2. Lightly butter one side of each tortilla.
  3. Place tortilla, butter side down, in skillet over medium heat.
  4. Drop 1/4
  5. salmon mixture onto one half of tortilla. Cover with mozzarella cheese.
  6. Fold tortilla in two and brown each side.
  7. Repeat for remaining 3 tortillas.
  8. Makes 4 servings.
