Ingredients

  • 4 large vine ripened tomatoes (or canned if out of season)
  • 1/2 c. minced onion
  • 1/4 c. snipped fresh cilantro leaves
  • Tabasco sauce to taste (optional)

Instructions

  1. Core tomatoes and chop coarsely.
  2. Add onions, cilantro and spices.
  3. Mix well and let stand for at least 1 hour to blend flavors.
  4. Serve as a side dish.
  5. Yield:
  6. 4 servings.
