Sand Tarts(Sandkake)

Ingredients

  • 1 lb. plus 4 Tbsp. butter
  • 2 eggs
  • 6 1/3 c. plus 1 Tbsp. flour
  • 3 c. powdered sugar
  • 1/4 c. plus 1 Tbsp. potato flour
  • 2 tsp. almond flavoring

Instructions

  1. Cream butter and sugar until almost white.
  2. Add eggs, one at a time.
  3. Add flavoring.
  4. Add flour slowly; do this by hand, as it will be too heavy for the mixer.
  5. Place about 1 teaspoon into sandkake tin and form to shape of tin.
  6. Trim off excess.
  7. Place on cookie sheet.
  8. Bake at 325° for about 20 minutes.
  9. Cool thoroughly in pans.
  10. Turn upside down and lightly squeeze side of tin to remove sandkake.
