Sausage Royale

Ingredients

  • 1/2 lb. smoked sausage, cut into 1/2-inch thick rounds
  • 1 small onion, chopped
  • 1 small bell pepper, chopped
  • 1 rib celery, chopped
  • 1 c. raw rice
  • 1 tsp. salt
  • 2 c. water

Instructions

  1. Fry sausage rounds, over low heat until slightly browned. Drain sausage on paper towel.
  2. Pour off fat except 3 tablespoons. Saute onion, celery and bell pepper in same pan until wilted, not brown.
  3. Add 2 cups water and 1 teaspoon salt.
  4. Bring to boil and cook 2 minutes.
  5. Remove from heat; add sausage and raw rice.
  6. Pour all into a greased casserole with tight fitting lid.
  7. Cover and bake 45 minutes at 350°.
