  • 1/2 tsp. thyme
  • 3-inch strip orange peel
  • 2 cloves garlic mashed
  • 1/2 lb. small fresh mushrooms

Instructions

  1. Preheat oven to 325°F.
  2. Dry the veal on paper towels.
  3. Heat olive oil in a 10 or 12-inch skillet.
  4. Brown the veal pieces on high heat in batches and arrange in a 4-quart casserole.
  5. Lower heat and lightly brown the onions in the skillet for 5 to 6 minutes.
  6. Toss the meat with flour, salt, and pepper, and cook for 3 to 4 minutes to lightly brown the flour.
  7. Remove from heat.
  8. Add white wine or vermouth to the onions in the skillet and pour everything into the casserole, bringing it to a simmer while stirring.
  9. Stir in peeled, juiced or chopped tomatoes, then add herbs, garlic, and orange peel. Bring to a simmer again and season lightly.
  10. Cover and bake in the oven for 1 hour 15 minutes to 1 hour 30 minutes.
  11. Add mushrooms, baste, and return to the oven for 15 minutes.
  12. Skim off excess fat from the sauce if necessary.
  13. Thicken the sauce if needed.
  14. Adjust seasonings to taste.
  15. Top with 2 tablespoons minced parsley or tarragon and serve with noodles or rice.
