Ingredients

  • Sour Rye Sponge
  • 2 1/4 to 2 1/2 c. all-purpose flour
  • 1 Tbsp. beaten egg

Instructions

  1. Choose a mixing and kneading method, avoiding the food processor.
  2. Add melted and cooled butter and salt to the Sour Rye Sponge.
  3. Add all-purpose flour as specified, starting with 2 1/4 cups and adding more as needed.
  4. Knead the dough until smooth and elastic.
  5. Let the dough rise for 45 minutes to 1 hour.
