Ingredients

  • 2 large lemons
  • 4 eggs
  • 2 cups sugar
  • 2 crust pie, unbaked

Instructions

  1. Slice lemons as thin as paper, rind and all, and combine with sugar.
  2. Mix well and let stand for 2 hours or longer, occasionally blending.
  3. Add the beaten eggs to the lemon and sugar mixture and mix well.
  4. Pour the filling into the unbaked pie crust, arranging lemon slices evenly.
  5. Cover with the top crust and cut several slits near the center.
  6. Bake at 450°F for 15 minutes.
  7. Reduce oven temperature to 375°F and bake for an additional 20 minutes or until a knife inserted near the edge comes out clean.
