Ingredients

  • 1 can cream of chicken soup
  • 1 1/2 c. milk
  • 1 envelope Lipton onion soup mix
  • 1 c. rice
  • 1 (10 oz.) pkg. frozen peas, thawed
  • 1 (10 oz.) pkg. frozen carrots
  • 3 whole boneless chicken breasts (cut in half)

Instructions

  1. In bowl, mix chicken soup, onion soup and milk.
  2. Measure out 1/2 cup and set aside.
  3. Stir rice, peas and carrots into remaining mixture.
  4. Pour into 9 x 13-inch casserole dish.
  5. Bury chicken pieces into rice mixture.
  6. Pour reserved soup mixture over top. Sprinkle with paprika.
  7. Cover tightly with foil.
  8. Bake at 375° for 1 1/4 hours.
  9. Makes 4 to 6 servings.
