Shortbread Buttons

Ingredients

  • 2 1/4 cups flour
  • 1/3 cup powdered sugar
  • 2 tbsp rice flour
  • 1 cup (2 sticks) chilled butter, chopped
  • None None Royal icing, silver dragees, to decorate

Instructions

  1. Preheat the oven to 325°F. Line 2 baking pans with parchment paper.
  2. Sift flour, powdered sugar and rice flour into a large bowl.
  3. Rub in butter using fingertips, until mixture resembles breadcrumbs. Press mixture together to form a firm dough.
  4. Turn out onto a lightly floured surface. Knead gently. Roll out between two sheets of parchment paper until 1/8 inch-thick. Cut into rounds using a 2-inch cutter. Arrange on prepared pans. Mark like buttons as shown, using a wooden skewer.
  5. Bake 15-20 mins, until lightly golden. Cool in pans 5 mins. Remove from pans; completely on wire rack. Decorate with tinted royal icing and silver dragees as desired. Store in an airtight container.
