Shrimp Baskets

Ingredients

  • 8 large cooked shrimp
  • 2 Tbsp. mayonnaise
  • 1/4 tsp. lemon juice
  • dash of pepper
  • 1 Tbsp. minced parsley
  • 1/4 tsp. minced onion

Instructions

  1. Spear both ends of a shrimp on a toothpick, pressing the ends as closely together as possible without breaking shrimp.
  2. Combine remaining ingredients and fill "basket" (formed by shrimp on pick).
  3. Makes 8 servings.
