Shrimp Monterey

Ingredients

  • 2 garlic cloves, minced
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 lbs medium shrimp, uncooked, peeled and deveined
  • 1/2 cup white wine or 1/2 cup chicken broth
  • 2 cups monterey jack cheese, shredded
  • 2 tablespoons fresh parsley, minced

Instructions

  1. In a skillet over medium heat, saute garlic in butter for 1 minute.
  2. Add shrimp; cook for 4-5 minutes or until pink.
  3. Using a slotted spoon, transfer shrimp to a greased 11x7x2-inch baking dish; set aside and keep warm.
  4. Add wine or broth to the skillet; bring to a boil.
  5. Cook and stir for 5 minutes or until sauce is reduced.
  6. Pour over shrimp; top with cheese and parsley.
  7. Bake, uncovered, at 350° for 10 minutes or until cheese is melted.
