Simple Scallops Recipe

Ingredients

  • 1 1/4 to 1 1/2 lbs. scallops, cleaned and washed
  • 3 tbsp. butter
  • 1/2 c. vermouth
  • 1-2 tbsp. minced fresh parsley
  • 1 tbsp. lemon juice
  • 1 clove garlic, chopped

Instructions

  1. Saute/fry the garlic in butter.
  2. Add in liquid removed scallops and cook quickly, about 5 min.
  3. Remove to a hot platter and keep hot.
  4. Add in vermouth and simmer 1 minute or possibly two.
  5. Add in lemon juice, salt, pepper and parsley.
  6. Just at the end, swirl in 1 or possibly 2 Tbsp.
  7. butter just till melted.
  8. Pour over scallops and serve immediately.
  9. Serves 4.
