Simple Vanilla Muffins

Ingredients

  • 1 egg
  • 1 cup milk
  • 1/3 cup oil
  • 1 tablespoon vanilla (decrease if adding fruit)
  • 1 tablespoon baking powder, scant
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 2 cups flour

Instructions

  1. Preheat oven to 400.
  2. Beat egg.
  3. Add oil, vanilla and milk, mix.
  4. Mix dry ingredients together, add to the wet mix.
  5. Grease muffin tin, fill cups 3/4 full.
  6. Bake 12-15 minutes, or until golden brown.
