Ingredients

  • American cheese slices

Instructions

  1. In a skillet, soft-fry the potatoes until golden and cooked through.
  2. Remove the potatoes from the skillet, drain excess grease, and place on a serving platter.
  3. Cover the fried potatoes with slices of American or Velveeta cheese.
  4. While the potatoes are frying, heat slices of ham in the microwave until warm.
  5. Place the heated ham slices on top of the cheese-covered potatoes.
  6. Fry eggs over easy in the skillet until the whites are set and the yolks are still runny.
  7. Place the fried eggs on top of the ham.
  8. Serve the skillet breakfast hot, optionally with toast or biscuits.
