Ingredients

  • 2 medium yellow squash, sliced in 1/4-inch
  • 1 green zucchini squash, sliced in 1/4-inch
  • 1 large onion, cut into rings
  • 2 large potatoes, peeled and cut into small cubes or slices
  • 1 carton fresh mushrooms, washed and sliced in 1/4-inch
  • salt and pepper to taste
  • 1/4 cup vegetable oil

Instructions

  1. Add all ingredients to a large skillet.
  2. Cook on medium heat, covered, until vegetables are tender.
