Ingredients

  • 1 onion, diced
  • 1 can whole kernel corn
  • 3 Tbsp. butter
  • 1 yellow summer squash, sliced
  • 1 (No. 202) can tomatoes
  • salt and pepper

Instructions

  1. Saute the diced onion in butter until translucent.
  2. Add the sliced yellow summer squash and simmer for 10 minutes.
  3. Drain the can of whole kernel corn and add it to the skillet along with the canned tomatoes.
  4. Continue to simmer until the squash is soft and flavors meld together.
  5. Season with salt and pepper to taste.
