Ingredients

  • 2 medium potatoes, diced
  • 1 medium onion, diced
  • 1 large can tomatoes
  • salt and pepper to taste
  • sugar

Instructions

  1. Saute onion and potatoes in a little oil until potatoes are done.
  2. Pour tomatoes in and simmer.
  3. Add salt and pepper to taste. Sprinkle a little sugar in to cut the tomato tart taste.
  4. Simmer just a few minutes longer.
  5. Serve over grits and with fried fish.
