S'More Snacks "Marshmallows"

Ingredients

  • 2 Tbsp. unflavored gelatin
  • 1 c. granulated sugar
  • 1 c. light corn syrup
  • 1 egg white
  • powdered sugar

Instructions

  1. Using small container, mix gelatin in 1/2 cup cold water.
  2. In 2-quart saucepan, combine sugar, syrup and 1/3 cup water.
  3. Cook to soft ball stage (240°), stirring only until sugar dissolves. Remove from heat; stir in gelatin to dissolve.
  4. Let cool 10 minutes.
  5. In large mixing bowl, beat egg white until stiff peaks form.
  6. Slowly add syrup, beating on high speed with mixer until candy stands in soft peaks.
  7. Sprinkle a cold cut container (like Tupperware) with generous amounts of powdered sugar; spread candy over.
  8. Let stand overnight.
  9. Dust top of candy with more powdered sugar.
  10. Dip pastry cutter or table knife in warm water and gently cut into squares.
  11. Makes 1 1/2 pounds.
