Ingredients

  • 1 lb. calf liver
  • salt and pepper
  • 1/2 c. flour
  • 2 Tbsp. bacon drippings
  • 1 c. hot water

Instructions

  1. Slice the calf liver thinly.
  2. Dip the liver slices in boiling water for an instant, then drain.
  3. Sprinkle with salt and pepper.
  4. Roll the liver slices in flour.
  5. Fry in bacon drippings, turning once, until browned.
  6. Add hot water and green onions to the skillet.
  7. Reduce heat, cover, and cook for 15 minutes.
  8. Serve the smothered liver with hot grits.
