Smothered Oxtails

Ingredients

  • 5 to 6 lb. oxtails
  • 2 c. flour
  • 1 Tbsp. salt
  • 1 Tbsp. pepper
  • 2 to 2 1/2 c. vegetable oil
  • 1 onion
  • 4 potatoes

Instructions

  1. In a large mixing bowl pour flour; add salt and pepper to taste.
  2. Batter oxtails.
  3. In a large skillet, heat vegetable oil. Brown oxtails.
  4. Place in baking dish with 2 to 3 cups of water. Add salt and pepper in water to your taste.
  5. Quarter onion.
  6. Add to oxtails.
  7. Bake at 350° for 1 hour.
  8. Quarter potatoes; add to oxtails.
  9. Cook 1 hour more until oxtails are good and tender.
