Snappy Eggs

Ingredients

  • 2 cans (4 oz. each) green chilies
  • 1 lb. grated mellow Cheddar cheese
  • 7 eggs
  • 1 1/2 c. Bisquick
  • 1 qt. milk
  • salt

Instructions

  1. Butter a large shallow baking dish. Split and seed chilies (I use the mild ones) and spread flat in bottom of dish.
  2. Cover chilies with cheese.
  3. In a large bowl, beat eggs and add Bisquick and milk.
  4. Beat well with mixer.
  5. Pour egg mixture over peppers and cheese. Bake at 350° for 1 hour.
  6. Serves 8.
