Ingredients

  • 10 to 12 dove breasts
  • 2 eggs
  • 1 cup flour
  • salt
  • pepper

Instructions

  1. In a large cast iron skillet, add 1-inch of vegetable or peanut oil and heat over medium-high heat until hot (drop of water sizzles; oil should not smoke).
  2. Dip dove breasts in the beaten eggs, then season with salt and pepper to taste.
  3. Roll the coated breasts in flour until evenly coated.
  4. Add the dove breasts to the hot skillet a few at a time, frying until golden brown on all sides over medium-high heat.
  5. Remove from skillet and drain on paper towels before serving.
