Soybean Muffins

Ingredients

  • 1 c. soybean flour
  • 1 c. white or graham flour
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 2 Tbsp. sugar
  • 3/4 c. milk
  • 1 egg, well beaten
  • 1 Tbsp. shortening

Instructions

  1. Mix and sift dry ingredients.
  2. Combine milk, beaten egg and shortening.
  3. Gradually add to the flour mixture, stirring only enough to moisten.
  4. Do not beat as batter should not be smooth. Fill greased muffin pans 2/3 full and bake in a 425° oven for about 15 minutes.
  5. Chopped nuts may be added, if desired.
