Swedish Rice Ring

Ingredients

  • 2 envelopes unflavored gelatin
  • 1/4 c. cold water
  • 1/2 c. uncooked long grain rice
  • 3 c. milk
  • 1/2 c. sugar
  • 1/2 tsp. salt
  • 1 c. whipping cream or lite Cool Whip
  • fresh or frozen sweetened strawberries

Instructions

  1. Soften gelatin in water. Set aside.
  2. In heavy 2 quart pan, bring rice, milk, sugar and salt to a boil, stirring occasionally. Reduce heat and cover.
  3. Cook over low heat until rice is tender, about 20 minutes. Remove from heat.
  4. Add gelatin, stirring until dissolved.
  5. Cover.
  6. Chill until partially set.
