Ingredients

  • 1 large spaghetti squash
  • 1 lb mozzarella cheese, sliced
  • 1 small jar spaghetti sauce

Instructions

  1. Preheat oven to 350°F.
  2. Place whole spaghetti squash in a large pot with enough water to cover.
  3. Bring to a boil and simmer, covered, for 30 minutes or until skin is tender.
  4. Remove the squash from water and let it cool.
  5. When cool enough to handle, cut the squash in two and scrape out the inside, discarding seeds and stringy center part.
  6. Butter a casserole dish.
  7. Layer the squash, mozzarella slices, and spaghetti sauce, repeating layers.
  8. Top the casserole with Parmesan cheese.
  9. Bake until heated through and cheese is melted, about 20 minutes.
  10. Serve hot.
