Ingredients

  • 10 oz pancetta or rindless bacon, finely diced
  • 1 hot red chili pepper, finely chopped
  • 1 1/4 oz spaghetti
  • 6 egg yolks
  • 3 Tbsp freshly grated Parmesan cheese
  • 6 Tbsp grated pecorino cheese

Instructions

  1. Combine the pancetta and chili pepper in a skillet and cook over low heat until some of the fat has melted.
  2. Increase the heat and cook until the pancetta browns.
  3. Cook the spaghetti according to package instructions until al dente.
  4. In a bowl, whisk together the egg yolks, Parmesan, and pecorino cheeses.
  5. Drain the pasta, reserving some cooking water.
  6. Add the hot pasta to the skillet with pancetta, then remove from heat.
  7. Quickly stir in the egg and cheese mixture, adding reserved pasta water if needed to create a creamy sauce.
