Spaghettini Verdi

Ingredients

  • 6 tablespoons butter
  • 2 tablespoons olive oil
  • 3 garlic cloves, crushed
  • 8 tablespoons minced Italian parsley (fresh)
  • 1 lb spaghettini (angel hair pasta)
  • 1 teaspoon ground black pepper
  • 14 cup grated parmesan cheese
  • salt

Instructions

  1. Heat butter and oil in a saucepan.
  2. Saute crushed garlic until golden.
  3. Discard garlic.
  4. Stir in the parsley and simmer 4 minutes.
  5. Cook the pasta according to package directions; drain well.
  6. Place in a large bowl.
  7. Add pepper, Parmesan cheese, and salt, and toss well.
  8. Add the parsley sauce and toss again.
  9. Serve immediately.
