Spiced Pickled Beets

Ingredients

  • 9 lb. small beets
  • 2 c. sugar
  • 1 Tbsp. whole allspice
  • 2 cinnamon sticks
  • 1 1/2 tsp. salt
  • 3 1/2 c. vinegar

Instructions

  1. Cook beets until tender.
  2. Cut in pieces if too large.
  3. Bring sugar, vinegar, spices and 1 1/2 cups of water to a boil and then simmer for 15 minutes.
  4. Pack beets in hot sterilized jars.
  5. Remove cinnamon sticks and pour the boiling liquid over the peeled beets in jar.
  6. Seal at once.
