Ingredients

  • 1/4 tsp ground cumin
  • 1/4 tsp cumin seeds
  • 1/4 tsp coriander seeds
  • 1/4 tsp cardamom pods
  • 1 tbsp olive oil
  • 1 tbsp butter, melted
  • 1/2 None medium green pumpkin, skin on, seeds removed, chopped

Instructions

  1. Preheat oven to 425°F. Heat a frying pan on medium and toast the spices 1 min, stirring. Combine spices, oil and butter in a bowl. Add pumpkin and toss to coat. Place pumpkin in a baking dish and bake 20 mins, until cooked and golden. Serve.
