Spicy Raspberry Brie Phyllo Bites

Ingredients

  • 8 ounces, weight Brie Cheese
  • 1/2 cups Raspberry Jam (seedless If You Can Find It)
  • 1 Tablespoon Red Chili Pepper Paste

Instructions

  1. Preheat oven to 375 degrees F.
  2. Scrape off most of the brie skin and cut into 30 small pieces.
  3. Whisk together the raspberry jam and chili pepper paste and set aside.
  4. If using store bought phyllo cups, place them on a baking sheet then drop a square of brie in each one.
  5. Bake for 5-6 minutes of until phyllo is golden and crisped and cheese is melted.
  6. Remove the cups from the oven and place a dollop of the jam in each one.
  7. Serve warm.
  8. If you need to reheat, you can pop these back in the oven at about 250 degrees F for a few minutes.
