Spinach Fritters

Ingredients

  • 1 pound fresh spinach
  • 2 large eggs
  • 1 cup fine bread crumbs, italian or plain
  • vegetable oil for frying
  • sour cream
  • grated parmesan or assiago cheese
  • Kosher salt

Instructions

  1. Trim stems from spinach and wash. Steam spinach in a large pot until
  2. wilted. Cool, and chop with a knife.Drain chopped spinach well.
  3. in a large mixing bowl, combine chopped spinach, eggs and breadcrumbs, use enough breadcrumbs so it will form into patties. Form the patties with your hands, and fry in the oil at a medium heat, turning as necessary until golden brown. Drain on paper towels,sprinkle lightly with salt if desired, serve hot with a dollop of sour cream and a sprinkle of grated cheese.
