Spinach Rice Pie

Ingredients

  • 2 pkg. frozen, chopped spinach
  • 2 medium onions, chopped fine
  • 3/4 c. Parmesan cheese
  • 1 c. rice
  • salt to taste
  • 6 oz. cream cheese
  • 3 eggs

Instructions

  1. Cook rice; cook spinach according to package directions and drain well.
  2. Beat 2 eggs and cream cheese together.
  3. Salt to taste.
  4. Combine this mixture with spinach, rice, onions and 1/2 cup Parmesan cheese.
  5. Grease 2 pie tins and divide mixture into them.
  6. Beat remaining egg and pour half over each pie.
  7. Spread evenly.
  8. Sprinkle remaining Parmesan cheese over pies.
  9. Bake at 450° for 30 minutes.
