Ingredients

  • 10 oz. frozen chopped spinach, thawed and drained
  • 4 oz. canned water chestnuts, drained and chopped finely
  • 8 oz. cream cheese or low-calorie cream cheese
  • 3/4 cup sour cream or sour half and half
  • 1 (1 5/8 oz.) package dry vegetable soup mix
  • 4 boneless chicken breasts

Instructions

  1. Combine the thawed and drained chopped spinach, chopped water chestnuts, cream cheese, sour cream, and dry vegetable soup mix in a bowl.
  2. Mix well until all ingredients are thoroughly combined.
  3. Divide the mixture into eight equal portions.
  4. At the neck end of each chicken breast, carefully lift the skin without tearing.
  5. Using a long-handled spoon, fill the space between the skin and meat with one portion of the spinach mixture, taking care not to break the membrane.
  6. Tuck the ends of the chicken under the skin to secure the filling.
  7. Place each stuffed chicken breast in an ovenproof baking dish.
  8. Cover the dish with foil and bake in a preheated 350°F (175°C) oven for 30 minutes.
  9. Remove the foil and bake uncovered for an additional 30 minutes until the chicken is cooked through and golden.
