Stacked Taco Salad

Ingredients

  • 1 lb. extra-lean ground beef
  • 1 (1 1/4 oz.) pkg. dry taco seasoning mix
  • 1 medium head iceberg lettuce, chopped (about 8 c.)
  • 1 c. (4 oz.) Cheddar cheese, shredded
  • 1 (16 oz.) can kidney beans, rinsed and drained
  • 2 large tomatoes, diced (about 2 c.)
  • 1 (8 oz.) bag baked tortilla chips, crushed

Instructions

  1. In a medium skillet, brown the ground beef with the taco seasoning mix, stirring to break up the meat; drain and cool. In a large, clear glass bowl, layer half of the lettuce, then half of the cheese, beans, ground beef and tomatoes. Repeat the layers, then top with the crushed tortilla chips. Just before serving, drizzle with the dressing and toss to coat the ingredients well.
