Ingredients

  • 1 lb. fresh asparagus
  • 1/2 tsp. salt

Instructions

  1. Cut the asparagus stalks about 2 to 3 inches from the bottom and peel up to 1/2 inch from the tip with a sharp vegetable peeler.
  2. Bring 1/2 inch water and 1/2 teaspoon salt to a boil in a 10 to 12-inch sauté pan.
  3. Add the prepared asparagus to the pan and cover.
  4. Bring the water back to a boil and simmer for 2 minutes until the asparagus is bright green and somewhat limp.
  5. Drain the water and immediately run cold water into the pan to stop the cooking process and retain the color.
  6. Drain the cold water and set aside until ready to reheat.
