- Cut the asparagus stalks about 2 to 3 inches from the bottom and peel up to 1/2 inch from the tip with a sharp vegetable peeler.
- Bring 1/2 inch water and 1/2 teaspoon salt to a boil in a 10 to 12-inch sauté pan.
- Add the prepared asparagus to the pan and cover.
- Bring the water back to a boil and simmer for 2 minutes until the asparagus is bright green and somewhat limp.
- Drain the water and immediately run cold water into the pan to stop the cooking process and retain the color.
- Drain the cold water and set aside until ready to reheat.
