Ingredients

  • 3 cans tomatoes (14 oz. each)
  • 1 can tomato paste (6 oz.)
  • 2 cans beans (redskin, kidney, etc.)
  • 1 medium to large onion, chopped
  • 1 green pepper, chopped
  • 2 sweet peppers, chopped
  • 2 hot peppers, sliced
  • 6 medium garlic buds
  • 1 1/2 lb. ground meat (beef and pork)
  • 1 can beer
  • 2 Tbsp. oregano, crushed
  • 1 Tbsp. basil, crushed
  • 1/2 Tbsp. chili powder
  • 1 Tbsp. cumin
  • 1/2 Tbsp. red pepper
  • 1/2 Tbsp. cinnamon
  • 2 Tbsp. bacon fat

Instructions

  1. Saute 3 buds garlic in olive oil, brown meat in oil; drain. Slice 3 more garlic buds, put in pot.
  2. Add the meat, canned tomatoes, onion, all the peppers and the beer.
  3. Bring to a boil, add all the spices and stir, reduce heat to low, add 2 bay leaves and the bacon fat.
  4. Simmer 2 hours.
  5. Add beans, simmer another hour.
  6. Use cornmeal to thicken to taste.
