Ingredients
- 1 cup fresh coarse ground black pepper ⓘ
- 1 cup paprika ⓘ
- 1 cup turbinado sugar
- 34 cup kosher salt ⓘ
- 12 cup brown sugar ⓘ
- 3 tablespoons chili powder ⓘ
- 3 tablespoons powdered chipotle pepper ⓘ
- 3 tablespoons peppercorn blend
- 3 tablespoons garlic powder
- 3 tablespoons dried onion flakes ⓘ
- 2 tablespoons cumin ⓘ
- 1 12 tablespoons dry mustard ⓘ
- 1 12 tablespoons Chinese five spice powder ⓘ
- 1 tablespoon celery seed
Instructions
- Hit the whole black peppercorns, whole peppercorn blend, and onion flakes in coffee grinder to provide course-ground texture.
- Mix all ingredients together.
- Apply liberally to large cuts of pork prior to smoking.
