Ingredients

  • 1 lb. tender grapevine leaves (fresh or preserved)
  • 1 1/2 lb. ground lamb or beef
  • 1/2 tsp. cinnamon
  • 1 tsp. dried mint
  • 1 cup rice
  • 1/2 cup lemon juice
  • salt to taste

Instructions

  1. Remove stems from leaves and wash them thoroughly.
  2. Dip fresh leaves in boiling water for 1 minute to soften, or prepare preserved leaves according to package instructions.
  3. Wash rice thoroughly and combine with ground meat and seasonings (cinnamon, dried mint, salt, and pepper).
  4. Place a leaf stem side up on a flat surface and put a spoonful of filling across the stem end.
  5. Turn up the stem end, fold over the sides, and roll tightly to form a cigar-shaped roll.
  6. Place extra leaves or lamb bones at the bottom of the cooking pot to prevent scorching.
  7. Arrange the stuffed rolls tightly in layers in the pot.
