Succulent Rib Roast

Instructions
- Preheat oven to 450 degrees.
- Place roast in a roasting pan. Roast for 15 minutes, reduce oven to 400 degrees.
- Continue roasting for about 20 minutes per pound for medium.
- Remove roast from oven, place on serving platter, keep warm.
- Blend flour into pan juices, cook over medium heat, scraping pan to loosen brown bits, for about 4-5 minutes.
- Gradually stir in water or beef broth.
- Cook over medium-high heat stirring continually, until mixture boils.
- Add salt, pepper and parsley.
- Slice roast and serve with pan gravy.
- Serves four.
