Summer Eggplant
Ingredients
Instructions
- Slice and coat eggplant with egg and milk mixture, then bread crumbs.
- Put on lightly greased cookie sheet.
- Bake at 350° for 30 minutes.
- Layer sliced tomatoes in an 8 x 8-inch baking dish, then eggplant, then 1/2 of Parmesan cheese, then tomatoes.
- Sprinkle the remaining Parmesan, then Mozzarella cheese.
- Cover with foil. Bake 20 to 30 minutes more.
