Instructions
- Boil potatoes in jackets until tender.
- Chill potatoes for 48 hours.
- Remove skins and grate the potatoes.
- Heat margarine, half and half, and salt in a 3-quart saucepan until margarine melts.
- Mix the grated potatoes with the heated mixture and cheese.
- Pour the mixture into a 2-quart baking dish.
- Bake at 350°F for 1 hour and 15 minutes.
- If desired, sprinkle grated cheese over the top during the last 15 minutes of baking.
