Creamy, cheesy grated potatoes with rich margarine and half and half, baked to perfection—an indulgent side perfect for family dinners or special occasions.

Ingredients

  • 9 medium potatoes
  • 1/2 cup margarine
  • 2 cups half and half
  • 1 tablespoon salt

Instructions

  1. Boil potatoes in jackets until tender.
  2. Chill potatoes for 48 hours.
  3. Remove skins and grate the potatoes.
  4. Heat margarine, half and half, and salt in a 3-quart saucepan until margarine melts.
  5. Mix the grated potatoes with the heated mixture and cheese.
  6. Pour the mixture into a 2-quart baking dish.
  7. Bake at 350°F for 1 hour and 15 minutes.
  8. If desired, sprinkle grated cheese over the top during the last 15 minutes of baking.
