Ingredients

  • 1 large sweet potato, peeled and chopped
  • 2 large onions, peeled and chopped
  • 2 to 3 Tbsp. olive oil
  • 1/2 c. water

Instructions

  1. In large heavy skillet with lid, add olive oil, then chopped sweet potato and onions. Stir until coated with oil and add 1/2 cup water. Cover with lid and cook over medium heat until vegetables are tender.
