Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 cup sugar
  • 1/3 cup shortening
  • 1 unbeaten egg
  • 1/3 cup milk
  • 1 1/2 cups pared, shredded apples
  • 1/4 cup melted oleo

Instructions

  1. Sift together the flour, salt, and nutmeg. Set aside.
  2. Gradually add sugar to the shortening and cream well.
  3. Blend in the egg; mix thoroughly.
  4. Add milk alternately with the dry ingredients, mixing after each addition.
  5. Stir in the shredded apples.
  6. Fill well-greased muffin cups two-thirds full.
  7. Bake at 400°F (200°C) for 20 to 25 minutes.
  8. Remove muffins from the pan and cool for 10 minutes.
  9. Dip muffins in melted oleo, then roll in a mixture of 1/2 cup sugar and cinnamon.
