Ingredients

  • 10 qt. bucket beets (with tops and roots left on)
  • 6 c. vinegar
  • 3 c. sugar
  • 3 Tbsp. mixed pickling spices, tied in a cloth bag

Instructions

  1. Boil the beets until tender, about 2 hours.
  2. Remove them from heat and peel.
  3. Slice the beets into 1/4-inch slices.
  4. Put the vinegar, sugar, and spice bag in a kettle and boil for a few minutes or until the sugar is well dissolved.
  5. Add the beets to the syrup and bring it back to the boiling point.
  6. Remove from heat.
  7. Pack while hot in sterilized jars and seal.
