Ingredients

  • 2 quarts boiling water
  • 1/4 teaspoon salt
  • 1 3/4 to 2 cups pineapple juice
  • 1/4 cup fresh lemon juice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon mace
  • 5 whole cloves
  • 2 medium sweet potatoes
  • 1 1/2 cups sugar
  • 12 ounces orange juice (do not use concentrate)
  • 2 liters diet Slice
  • orange slices

Instructions

  1. Bring 2 quarts of boiling water to a boil in a large saucepan.
  2. Peel and slice the sweet potatoes.
  3. Add the sliced sweet potatoes to the boiling water.
  4. Add 1/4 teaspoon of salt and cook until the potatoes are soft.
  5. Drain the potatoes.
  6. Puree the cooked sweet potatoes in a blender until smooth, aiming for about 2 cups of puree.
  7. In a large pot, combine pineapple juice, fresh lemon juice, orange juice, and diet Slice.
  8. Add cinnamon, nutmeg, mace, cloves, and sugar to the mixture.
  9. Heat the mixture until hot but not boiling, stirring occasionally.
  10. Garnish with orange, lemon slices, or strawberries before serving.
