Ingredients

  • 16 oz. can julienne beets
  • 1 pkg. lemon gelatin
  • 1/4 cup sugar
  • 1/4 cup vinegar
  • 1 tablespoon horseradish

Instructions

  1. Drain beets; measure juice.
  2. Add water to drained beet juice to make 1 1/2 cups liquid.
  3. Bring liquid to a boil and remove from heat.
  4. Add lemon gelatin, sugar, vinegar, and horseradish, stirring until gelatin and sugar have dissolved.
  5. Add beets and turn into mold or dish; chill until firm.
