Ingredients

  • cukes (enough to fill 8 to 10 qt. container)
  • 3/4 cup salt
  • water (to cover)
  • 1/4 cup alum
  • vinegar
  • about 5 pounds sugar
  • 2 tablespoons mixed pickling spices

Instructions

  1. Slice cukes and cover with salt and water to cover on the first day.
  2. Prepare a brine with water, salt, alum, vinegar, sugar, and pickling spices.
  3. Pour the hot brine over the cukes in the container.
  4. Seal and store the pickles to ferment and develop flavor.
