Ingredients

  • 1/2 lb. cracked bulgur wheat
  • 2 fresh tomatoes
  • 1 cucumber
  • 1/2 c. onion
  • 1 Tbsp. parsley
  • 1 c. lemon juice
  • 1 c. vegetable oil
  • 1 tsp. salt

Instructions

  1. Empty the bulgur wheat into a bowl and cover with cold water.
  2. Let the wheat expand and soak for about 15-20 minutes.
  3. Drain excess water from the bulgur wheat.
  4. Chop the tomatoes, cucumber, and onion into small pieces.
  5. Combine the drained bulgur, chopped vegetables, and parsley in a large bowl.
  6. Add lemon juice, vegetable oil, and salt to the mixture.
  7. Mix well and adjust seasoning if needed.
  8. Serve immediately or chill before serving.
